All our pâtisserie and baking classes start with weighing the ingredients, and then your instructor will guide you through the key steps of making your own hands-on.
In the case of Croissants you will learn the art of the fold - the key process to 'laminate' your dough, which eventually will give you these wonderful volumes of air and dough. You will also learn how to prepare the butter for encasing in the dough, and practice the encasing itself.
There are different moments when you need to let the dough rest, for different reasons - all explained during the class. And then of coure the art of rolling the perfect croissant - natural or chocolate based. Before applying egg wash and baking. Last but not least, it will be time to taste your creations with tea and coffee - and a few stories. Before leaving with boxes full of your creations of course which you can share (or not) with friends and family. The whole experience will last about 3 hours

Amanda and I love to cook and we love to share. Amanda is a ceramist while I am a chemical engineer by training. So baking and pâtisserie kind of nicely fit the middle of both of these: science and touch. So while being British and French respectively, after 15 years of going astray in Corporate America, we followed our passion in 2012, re-trained and opened Le Foodist. Le Foodist has become one of the most successful cooking schools in Paris where we love to share various aspects of French culture through Food. And we have gathered a team of extremely talented Chefs (Frédéric, Sarah, Christophe, Florence, Anne, Guillaume and Hugo) who among other things can teach how to make croissants, baguettes, macarons, chocolate eclairs and other French Desserts - delivering tips and tricks and focusing on techniques, while having fun!
